Ask most people what you get when you mix whiskey and beer and they might tell you, “sick.” Others, who probably found out in their younger years, will utter remembrances of a drink called a Boilermaker. Ask the folks at Jameson, however, and they might just hand you a bottle of their Caskmates IPA Edition Irish whiskey.

Before we begin, it’s worth noting that IPA (in the case of this whiskey) refers to Irish Pale Ale – not India Pale Ale. But that twist is perhaps appropriate, especially when you consider that this is, in fact, a whiskey aged in beer barrels – as opposed to the more commonplace whiskey barrel-aged beer. Truth be told, the process is quite fascinating: Jameson first sent their whiskey barrels to a local brewery to create said Irish Pale Ale. The casks, then seasoned with beer, were then returned to Jameson, who went on to create the whiskey you see before you. The end result is a liquor marked by citrus notes, delicate spices, and a finish of fruit, hops, and barley, making for a uniquely smooth Irish spirit available starting at $29.
