When someone earns the title of master bladesmith, you can trust that they know what they’re doing. But when that knife maker also has a family tradition of crafting chef knives that dates back a whopping 420 years, there’s that much more reason to hold them in high esteem. It’s probably safe to say that this is why Spyderco tapped Murray Carter — the 17th-generation Yoshimoto bladesmith — for their latest chef knife collection.
Comprised of five different knife styles — Petty, Funayuki, Nakiri, Bunka Bocho, and Gyuto — this elite set covers all the kitchen bases from finely slicing vegetables to butchering meat and then some. Built in Japan to the brand’s exacting standards, these production blades are all made to capture Carter’s meticulous craftsmanship and attention to detail, including his “Carter Elbow” — a distinct signature taper from the blade’s spine to the tip’s reinforcement point. Each is made with Aogami Super Blue steel blades and octagonal, burled G-10 handles — making them gorgeous, unique, and remarkably reliable. The Itame Series will be available later this year, but pricing has yet to be announced.
